Okay, okay. So veganism has a stigma. My friends call it the “Ponsonby fad-diet”. I’m not gonna lie, I probably couldn’t live 100% vegan because I love fish and baking waaay too much… but vegan dessert – woah. That stuff is good. Raw “cheesecakes”, mousse, puddings, icecream, slices – you name it, there’s a delicious healthy recipe out there which you can make with simple ingredients and a blender.
(just don’t leave it until morning to whiz up those treats as it can be a little on the noisy/annoying side!)
Tonight I made HEALTHY CHOCOLATE MOUSSE – oh my giddy aunt. I cannot begin to describe how delicious it was, so I think you’ll have to try it out for yourself… even if you’re not a fan of the whole weirdo healthy eating thing, you will not be disappointed! It’s also refined sugar free, dairy free, gluten free, paleo – and still tastes good! Win – win.
- Cocoa or cacao powder (cacao is unrefined 🙂 )
- One banana
- Almond milk (you could probably use normal instead)
- Dash of vanilla
- 1 tsp vanilla protein powder if desired
- 2 soft medjool dates (best refrigerated)
- small handful of cashews
Handy hint: Add a tsp or 2 of peanut butter to make it snickers flavoured!
Whip everything up in a blender for 30 seconds to a minute until it forms a mousse texture and pop it in the freezer. 10 minutes and it should be nice and cold – leave in for an hour/2hrs and re blend for yummy soft-serve ice-cream! I sprinkled mine with the last of my birthday Little Bird “grawnola” for an extra crunch, and added some fresh pears because they are so good right now…
